Keeping it Light

My wife wanted me to cook something light. I had no clue on what to cook. While strolling into the grocery store I ran into a lonesome avocado. I decided to let that be my inspiration to my dish. Ten minutes later i decided to make Grilled salmon w/ avocado salsa. Asparagus and wild rice were the sides. It ended up being light and delicious.
I have always be bad with writing recipes. I am more of a taste till you food tastes good. Everyone's palette is different. I know when I work I have to underseason foods because I am use to so much seasoning.
I will start writing recipes in the near future...

Mmmmm.... Chocolate Fudge

I had the pleasure today to make some fudge. Their are so many recipes on the Internet to try. You just have to find your favorite and go with it. After making the fudge I coated them in different toppings. I used pistachios, cocoa powder, & shredded coconut. They came out great.

Stauffers of Kissel Hill...

So many grocery stores ... Where to go.. I like the variety that Stauffers offers to their customers. Produce is fresh, bakery has all types of fresh breads and desserts. Fantastic fresh coffee selection, all types of candies and nuts, great ethnic variety& so on. One thing I know a lot of customers enjoy is under the tent @ Stauffers. The showcase a different BBQ item Friday,Saturday, and Sunday. It is usually held during the warmer seasons.

Quenepas, Mamincillo, Limoncillo, One Fruit but Many Names

These delectable fruits vary in names depending what island you are from. One thing is when any carribian native sees these little green fruits, their mouth waters. I am originally from Florida , so I had the pleasure of enjoying Quenepas in my childhood.
Quenepas are the size of a silver dollar. You crack the green shell off and you will find a light flesh color all over a big seed. All you do is throw it in your mouth and try to bite the flesh off. Mamoncillo( Mama means to suck)
I have found that most people that have never tried these as a child think these are disgusting as an adult. Which is good cause it means more for me. Lol.

Living in the northeast it is a lot harder to find Quenepas. Usually we go to a neighborhood Spanish store. The season is very short and only lasts for about 1.5 months. If you ever get lucky and see these guys purchase one and tell me what you think.

Paella... So many interpretations

I decided to make paella the other day. The problem was finding a proper paella pan. I finally found one at reading glassware place in Rockville outlets.

Since I am a professional chef I just freestyles the dish. I try all types of seafood and let the magic happen. I realized that I prefer my paella with a little twist. I enjoy mine with lots of garlic, dice tomato, lemon zest, etc..... At the end of the day it is about what you enjoy...

I am back

It has been a while since my last post. I have had a lot of changes in my life, which are all positive. I am know settled down and ready to start back up.
